Not a Coffee Cake Dessert Coffee Cake
This was a total disaster. The yeast didn’t work. Don’t try this at home. I’m only posting this so I can remember how not to make a sweet bread.
1/2 cup luke warm very strong coffee
1/2 cup orange juice with extra pulp
2.25 cups brown sugar
2.5 cups bread flour
.75 cup oil
.5 cup raw sugar
1 tbsp instant yeast
2 tsp salt
1.5 tsp pumpkin spice
1 tsp cinnamon
3 tbsp heavy cream powder
2 eggs
caramel bits
This was vaguely based on this recipe. It seems crazy to have that much oil AND butter. I left out the butter but maybe shouldn’t have. I just kind of mixed all the ingredients together except the flour, salt and yeast, which I put on top. I tried to give it a few minutes to let the orange juice and eggs warm up but I got impatient. I set it to regular soft bead mostly to reduce the number of variables.
